Early Beginnings
Every great barbecue story starts with a spark. For Pork Smokes BBQ, that spark was ignited in a bustling kitchen in Chandler, AZ, under the watchful eye of Executive Chef Keenan from Boston, MA.
As a young man washing dishes and prepping lines, our founder didn’t just learn how to handle a knife; he learned a philosophy. Chef Keenan showed him that food is never just fuel—it is an experience. A perfectly seasoned dish, served with genuine hospitality, has the power to completely turn someone’s day around. That realization changed everything. Food wasn't just a career path anymore; it was a passion.
The Texas Pilgrimage
With Chef Keenan’s lessons ringing in his head, he knew he needed to master the ultimate canvas of flavor: American Barbecue.
He packed his bags and headed south for a rite of passage—a legendary tour through the heart of Central Texas. He drove his family through different cities, windows down, breathing in pecan and post oak smoke, eating off butcher paper in Austin, Lockhart, and Driftwood. He watched pitmasters who used nothing but salt, pepper, and time to create magic. He learned the strict discipline of low-and-slow fire management, and how the right coarse rub creates that coveted, crunchy bark.
Texas taught him the rules of smoke. A Pitmaster in Texas told him, "Making great BBQ is about understanding your environment and using it to your advantage."
Defining "Prescott Style" BBQ
Prescott is a place where the Old West meets the pine forests, where rugged peaks meet clear blue skies. It deserved a flavor profile all of its own. Not too sweet like Kansas City, not as minimalist as Texas, and with a kick that honors the Southwest.
Our founder set out on a new quest: to pioneer "Prescott Style BBQ".
He spent countless late nights in the kitchen, blending and testing. He balanced the bold, savory punch of Texas-style black pepper with subtle, unexpected notes that capture the spirit of the Arizona mountains. It took many iterations, but he finally cracked the code, creating the ultimate lineup of handcrafted rubs and seasonings.
